# Directions:
01 - Melt butter in a large pot over medium heat. Add diced onion and sauté until translucent, approximately 3 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
02 - Add carrots, celery, bell pepper, zucchini, corn, broccoli, and potatoes to the pot. Sauté for 5 minutes, stirring occasionally to ensure even cooking.
03 - Sprinkle flour over the vegetables and stir thoroughly to coat evenly. Cook for 2 minutes, allowing the flour to cook out slightly.
04 - Pour vegetable broth into the pot while stirring constantly to combine and dissolve the flour completely. Bring to a boil, then reduce heat to a gentle simmer.
05 - Cover the pot and simmer for 15 to 18 minutes until potatoes and all vegetables are tender when pierced with a fork.
06 - Stir in milk, heavy cream, dried thyme, oregano, and red pepper flakes if using. Simmer gently for 5 minutes.
07 - Reduce heat to low. Gradually add Parmesan and mozzarella cheese, stirring constantly until fully melted and the soup achieves a creamy consistency.
08 - Taste the soup and adjust seasoning with salt and freshly ground black pepper as needed.
09 - Ladle soup into bowls and serve immediately. Top with additional grated Parmesan cheese if desired.
